Healthy Start to the New Year

Happy New Year!
My alcohol-free month of vegan, relatively low carb, and mostly whole foods has begun!
Today was a productive start to 2015. I bathed the dog, went to the gym and lifted weights, went grocery shopping, rode my exercise bike, cleaned the bathroom and kitchen, unpacked, changed the sheets on the bed, and made some delicious food.
Let's just say, the boys had other plans. ;)


Here's the stuff I ate today:
I just had coffee with coconut creamer for breakfast as I wasn't hungry. Then, I made myself a delicious lunch of what I like to call "save the crab" salad with a green salad. It's a vegan take on crab salad made with hearts of palm (instead of crab) based on the vegan crab cake recipe in Crazy Sexy Kitchen.

 
Then, I had a Mamma Chia beverage for a snack. This one was pretty good.
 
I went all out for dinner and made a black-eyed pea and root veggie tagine based on the Chickpea Tagine recipe in Crazy Sexy Kitchen. Since it's New Year's Day, I added black-eyed peas instead of chickpeas. I made mine with turnip, sweet potato, and carrot. This was out of this world good!

 
I served this with couscous and some vegan cucumber raita. I decided to make the raita with Tofutti Better Than Sour Cream non-dairy sour cream this time. It was pretty excellent.

Vegan Cucumber Raita

Ingredients:
1 package Tofutti Better Than Sour Cream
1 cucumber, deseeded
about 1 teaspoon garam masala
about 1 teaspoon cumin
a few twists of freshly ground black pepper

Method:
Put sour cream in bowl. Grate about 3/4 of the cucumber directly into the bowl with a hand grater. The cucumber's juice will thin out the sour cream; you want that to happen. Add the spices. Stir and keep in fridge until ready to serve. I like to garnish mine with some cilantro leaves and leave it in the fridge for at least an hour so that the flavors blend. Mmmm.

Chickpea and Prune Tagine (vegan)

Chickpea tagine with couscous with prunes
*Recipe adapted from Dec 2011 Vegetarian Times magazine.

Ingredients:
olive oil
1 onion, diced
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 (15oz) can crushed tomatoes
3 cups cooked chickpeas
prunes (quartered) for couscous
fresh cilantro leaves as garnish

Instructions:
Heat oil in saucepan, add onion, and saute until onion is soft and translucent. Stir in spices and saute 30 seconds. Add tomatoes, chickpeas, and 1/4 cup water, simmer 10 mins. Serve over couscous (recipe below) and sprinkle cilantro leaves on top.
*This would be even better with some okra in it! Definitely doing that next time.

Roasted Carrots with Za'atar Spice and Chipotle Mashed Sweet Potatoes

Roasted Carrots with Za'atar Spice
*I think I cut this out of Vegetarian Times magazine, but I don't remember.
Preheat oven to 450F. Quarter two pounds of carrots. Toss carrots with olive oil, salt, and pepper and spread them out on a rimmed baking sheet. Roast until browned, about 20 mins. Remove from oven and toss in a bowl with 4 teaspoons za'atar spice, juice of two lemons, chopped parsley, and roasted (or raw) seasame seeds. Enjoy!
(Za'atar spice is a Middle Eastern spice blend. I purchased mine at my favorite Indian spice store.)


3.20.2011 Chipotle Mashed Potatoes
Chipotle Mashed Sweet Potatoes
Peel and cut 4 sweet potatoes into small chunks. Boil potatoes until very tender, about 20 mins. Drain and return potatoes to pot. Toss in 2-4 tablespoons of vegan butter, salt (to taste), and 2 finely chopped chipotle peppers in adobo plus 1 tablespoon of the sauce from the pepper can.

Moroccan Beet and Avocado Salad

This ... is super yum!

Ingredients:
1/3 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon agave nectar (or dark honey if not vegan)
1 tablespoon dijon mustard
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
salt to taste
4 medium-sized beets
1 avocado

Directions:
Roast the beets until they're tender and then peel when they've cooled. Cut beets and avocado into 1 inch chunks. Mix the rest of the ingredients in a separate bowl and pour over the avocados and beets. Enjoy!

To Roast Beets:
Seal each beet, separately, in aluminum foil (stems removed). Roast in 400F oven for about 45 minutes to one hour or until a knife slides through easily. Remove beets from oven and open foil. Let them cool until you can handle them. Remove skin by rubbing beets with a paper towel. Skin should come off easily if beets are roasted well. (You might want to wear gloves to do this or else your hands will be stained red.)

Moroccan Chickpeas, Couscous, and Roasted Brussels Sprouts (vegan)

This meal is quick, easy, and super yummy! Perfect for a weeknight dinner.

Moroccan-Style Chickpeas

Ingredients:
1 (15.5oz) can chickpeas, drained and rinsed
1 can tomatoes with green chilies
1/2 cup diced onions
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1 tablespoon ground cumin
1/2 tablespoon ground ginger
1 tablespoon ground coriander
3/4 cup vegetable broth
salt & pepper to taste (optional)

Method:
Sauté onion in olive oil until onion is translucent. Add garlic and cook until aromatic (about 1 min). Stir in cumin, ginger, and coriander and coat the onion and garlic with the spices.
Add chickpeas, veggie broth, and tomatoes and bring to a boil. Cover and simmer on low for 10 mins.
Serve with couscous.

Moroccan Spiced Couscous with Green Peas
1 box Near East plain couscous
1 cup frozen peas
Moroccan spice blend*

I just buy a brand of Near East couscous and cook the box according to its directions. When it tells you to add the couscous to the boiling water, I throw in my moroccan blend of spices for couscous. Stir, cover, and let sit 5 mins. While that's sitting, heat frozen peas in the microwave. Throw drained peas into couscous and fluff with a fork.

Roasted Brussels Sprouts
about 24 sprouts
cooking oil spray (i use olive oil spray)
red pepper flake
onion powder
garlic powder
dried oregano

Method:
Preheat oven to 400°F. Cut bases off sprouts, remove tough outer leaves, and cut each sprout in half. Spray a cookie sheet with oil spray. Lay spouts out on cookie sheet with the cut side (flat side) down. Spray the sprouts. Sprinkle all the spices over the sprouts evenly. Put in oven and roast for 15 mins.

Salade de carottes à l'eau de fleur d’oranger

Salade de carottes à l'eau de fleur d’oranger
(aka Carrot Salad with Orange Blossom Water)



I made this Moroccan dish last night to accompany some salmon that I put on the BBQ. I loved it, but Lucas didn't like the scent of the orange blossom water. He said it smelled like perfume and not something he should eat. Ah well.

I thought it was delicious!

Ingredients :

600g of carrots (1.3 lbs)
2 cloves garlic, peeled
1 tablespoon of sugar
1 tablespoon of extra virgin olive oil
2 teaspoons orange blossom water (purchased at local Indian grocer)
1/2 teaspoon salt
black pepper to taste
frech chopped flat leaf parsley and cilantro leaves to garnish

Method:
Peel the carrots and cut them in half and lengthwise. Put them in a pot with just enough water to cover them, 1/2 the garlic, and the sugar. Boil until just tender. Drain.
While the carrots are boiling, mix together the olive oil, orange blossom water, remaining garlic, and pepper. Return the carrots to the pot with this mixture and sauté over low heat for a few minutes to combine the flavors.
Remove from heat, put in a serving dish, and mix with the chopped parsley and cilantro.
