A Mango Lassi and a Lazy Snow Day with Chewie

Last night into this morning it snowed about 8 inches and it was in the single digits this morning, so Chewie and I slept in and are now enjoying a lovely snow day.



That's the only picture I could snap of Chewie before he ran back in the house. haha. Good thing he's wee wee pad trained. ;o) When we finally got up, I made a mango lassi for breakfast.




Mango Lassi
1 ripe mango, skin removed and cubed
1 container of vegan yogurt (I used coconut almond milk yogurt which was divine.)
about 6 ice cubes
1/4 cup almond milk
1/4 teaspoon cardmom spice
1/4 teaspoon cinnamon
Blend all ingredients in a blender and enjoy! yum.
 
After that I had some homemade hummus and melted Daiya vegan cheddar on toast as a snack. Mmm.

The Perfect Limeade

I don't have a big sweet tooth and I much prefer savory treats, but this is quite yummy when you are craving something sweet and refreshing ... as long as you're not diabetic. ;)

The Perfect Limeade

2 cups simple syrup (2 cups vegan sugar, 2 cups water)
2 cups fresh squeezed lime juice
1 cup water
1/2 teaspoon salt

This recipe makes a half pitcher. *Just substitute lemon juice for lime juice for the perfect lemonade.

First, make your simple syrup. Pour two cups water and two cups sugar into a saucepan and heat until the sugar is dissolved. Chill in fridge. Pour two cups fresh squeezed lime juice into pitcher. Stir in 1/2 teaspoon salt, 1 cup water. Add 2 cups of the simple syrup once it's chilled and stir well. Add some thin slices of lime to make it look pretty.
Serve over ice.

This also makes a great margarita base; just add tequila and a smidge of orange liqueur to your glass and stir. Mmmm.

Healthy Vegan Mango Lassi

This is a delicious way to get your probiotics!

Ingredients:
6oz plain or vanilla soy yogurt

*Make sure your soy yogurt doesn't have any milk-derived ingredients. Sometimes they're sneaky and soy yogurt isn't vegan!
1 large ripe mango, peeled and cut into chunks
3/4 cup ice cubes


Directions:
Put all ingredients into your blender and blend until smooth.
Yum yum yum.
