The Garden of Vegan p.97
3/4 cup silken tofu (I had a 12oz pkg of firm silken tofu and I actually used the whole thing plus some water to thin it out.)
3 tablespoons apple cider vinegar
2 tablespoons fresh dill
(or 2 teaspoons dried dill)
1 teaspoon salt
pinch black pepper
1 teaspoon maple syrup (I added a bit more)
Blend all ingredients in a blender or food processor. Enjoy.
